1 1/2 cups flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg (optional)
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 1/4 cup applesauce
1/4 cup vegetable oil
1 tsp vanilla extract
1/2 cup raisins
Preheat oven to 350 degrees F. Lightly grease and flour a 9 inch bundt pan or a 8x4 inch loaf pan. Combine flour, baking powder, baking soda, nutmeg and cinnamon; mix well. In a separate bowl, combine sugars, egg, applesauce, oil and vanilla. Mix into flour mixture until combined then stir in raisins. Bake for 30-35 minutes or until cake is browned and a toothpick inserted into center comes out clean. Cool 10 minutes and then turn pan upside down onto a rack or plate. Allow to cool completely before serving.
